DATE NUT COOKIES
Makes 2½ Dozen
Ingredients:
½ Cup Chopped Dates
½ Cup Chopped Pecans or Walnuts
1 Cup Whole Rye Flour
1 tsp. Baking Powder
3 Tbsp. Soy Flour or Whole Wheat Flour
½ Cup Date Sugar
¼ Cup Safflower oil
¼ Cup Soymilk
Non-Hydrogenated Margarine for Cookie Sheet
Directions:
Preheat oven to 350 degrees. Grease a cookie sheet.
Mix the oil, soymilk and date sugar together.
Blend well.
Stir in the remaining ingredients and mix thoroughly.
Shape the dough into 1-inch balls and place them about
3 inches apart on the cookie sheet.
Flatten them with the back of the spoon until they
are ¼ inch thick.
Bake for 10 minutes, until they are lightly browned.
Variation: You can also spread mixture in pan,
and cut into squares.
